Enzyme Use in Unconventional Media for Biomass Valorization and Fragrance Synthesis

Milano, May 5-7, 2025

Workshop Overview

The INBIOWAL Workshop held in Milan (5–7 May 2025) was hosted jointly by the Consiglio Nazionale delle Ricerche – Istituto di Scienze e Tecnologie Chimiche “Giulio Natta” (SCITEC-CNR) and the Politecnico di Milano (POLIMI). The event focused on biotechnological and chemo-enzymatic routes for producing valuable fine chemicals, natural flavours, and fragrances from renewable resources.

The workshop combined scientific presentations, laboratory demonstrations, and networking sessions, providing a comprehensive view of current challenges and solutions in sustainable bioprocessing.
It also served as an important platform for strengthening collaboration within the INBIOWAL network and preparing joint research activities for the upcoming “Biorefinery for the Future” initiative.

Day 1: Sustainable Chemistry and Biomass Valorisation

The workshop began at the SCITEC-CNR Auditorium with an opening session dedicated to innovative approaches in sustainable chemistry and biomass valorisation.
After a welcome address, Prof. Elena Rosini (University of Insubria) delivered an inspiring keynote lecture on “A Sustainable Biotechnological Platform: Generating New Value from Renewable Biomasses and Waste.”

Her presentation was followed by insightful talks from Dr. Francesco Secundo and Dr. Roberto Consonni (SCITEC-CNR), who presented recent advancements in enzyme optimisation in organic solvents and NMR-based biomass characterization.
The session concluded with an informal welcome reception, allowing participants to exchange ideas and establish new research connections.

Day 2: Green Chemistry and Biocatalytic Innovation

The second day of the workshop took place at Politecnico di Milano, where sessions were focused on green chemistry applications in flavour and fragrance synthesis.

The morning session began with Prof. Arianna Rossetti, who introduced novel nanotechnological approaches to the valorisation of agri-food waste for the green synthesis of silver nanoparticles.
Next, Prof. Maria Elisabetta Brenna discussed sustainability in the chemistry of flavours and fragrances, highlighting the potential of biocatalytic methods.
Her talk was followed by Dr. Francesco G. Gatti, who presented the chemo-enzymatic synthesis of fragrances, bridging traditional organic synthesis with enzymatic processes.

After the coffee break, participants enjoyed a laboratory tour at POLIMI’s Department of Chemistry, Materials, and Chemical Engineering “Giulio Natta”, followed by a networking lunch.

The afternoon session opened with Dr. Stefano Serra (SCITEC-CNR), who presented “Biotechnological Approaches to the Production of Natural Flavours from Renewable Feedstocks.”
Later, Prof. Brenna and Dr. Fabio Parmeggiani led an engaging presentation entitled “The Wonders of Vanilla”, exploring biocatalytic pathways leading to natural aroma compounds.

The day concluded with a tour of Milan city centre and a network dinner, providing a great opportunity to strengthen personal and scientific ties among INBIOWAL partners.

Day 3: INBIOWAL Consortium Session

The final day was reserved for INBIOWAL consortium members and held at POLIMI’s Porta Room.
The internal session focused on the progress of Work Packages, sharing of research results, and planning of future activities related to biocatalysis, enzyme engineering, and waste valorisation.

Partners discussed ongoing collaborations and outlined the next steps towards developing the BIOREF4FUTURE concept — the envisioned international Center of Excellence in biorefining.
The event concluded with a joint lunch, marking the end of three productive and inspiring days in Milan.
